Need a quick and healthy meal anytime of day? Packed wth protein and veggies, and low on carbs , this one fits the bill. What you'll need:One zucchini, fresh garlic, 3 to 4 eggs, your favorite shredded or soft cheese. start by lately pan sautéing your zucchini and garlic on medium high in a little bit of oil and/or butter. Don't forget salt and pepper! When they get a little caramelization on them and start to soften flip them over. Beat your eggs well for at least a minute so they are fully blended and pour over the zucchini slices. Cover to help the eggs set up and then when mostly set flip The entire thing over… It's OK if it doesn't hold together! It's meant to be rustic! Cover to help the cheese melt. Are use mozzarella this time because it's what I had but feta or goat cheese or cheddar would also be extraordinary. once it starts to melt shut it off and let it finish without the heat so the eggs don't brown too much on the bottom. enjoy! This also reads very well for lunch the next day and would work with just about any veggies that are low in water content.
