Whether you have a trendy spiralizer or not, zucchini noodles are easy, healthy and delicious! What you'll need:a zucchini, boneless skinless chicken, tomatoes, pesto, garlic, butter and Parmesan. If you have a spiralizer, go ahead and spiral cut your Zoodles from the round zucchini. Mine was too big so I will be demonstrating how to get Zoodles without a spiralizer! First cut them into sections or strips. Use the thin slicer on your box grater to make fettuccini shaped thin noodles. In a sautee pan pour some of the oil off the top of your pesto and add garlic, salt and pepper. If you don't have excess pesto oil use olive oil and/or butter. Toss in a few chili flakes too. More if you like it hot! Sautee your diced chicken in the oil and seasoning mixture. When firm add a spoonful of pesto to coat the chicken. Take the same approach with pesto oil and seasonings to sautee your Zoodles. When they turn bright green add in a spoonful of pesto and diced tomatoes. Toss together with your chicken! Serve with shaved Parmesan.
