Eggs?! Yep! In my efforts to eat veggies with all three meals, I am determined to use these zucchini in a variety of ways. This one is going to be quick and dirty. Just toss sliced zucchini on a greased griddle with a healthy couple of pinches of salt and pepper along with some garlic (fresh, paste, powdered, whatever you've got!) Top with feta (or Parmesan would be good too) and enjoy! The egg yolks make a delicious sauce. Mmmmmmmm.... You're welcome! ☺️
