Delicious for dessert or breakfast, you'll LOVE this hearty and flavor-packed zucchini bread. First cream together 3 eggs, 2c sugar, 1/2 cup oil (I used peanut but you can use any lightly flavored liquid oil), and 1/2 cup apple sauce (you could sub two ripe, mashed bananas here if you want!) Once well incorporated add in 2 tsp vanilla, 1 can pineapple pieces (without the juice) and 2 cups shredded zucchini (with most of the water squeezed out). Mix another 20-30 seconds until incorporated. Then in in a mixing bowl mix together dry ingredients: 3 cups flour, 1 tsp salt, 1.5 tsp baking soda, 1/2 tsp baking powder, 2 tsp cinnamon, and 1/2 tsp nutmeg. Stir together to avoid lumps of baking soda/powder, and add slowly to your wet mix. Don't over mix. Once it's all stirred together add 1 cup rough chopped walnuts and give it one last stir. Oil and flour two loaf pans and split the batter between them. Bake in a preheated oven at 325 for almost an hour or until light brown on top and a toothpick comes out clean. Wait until cooled to turn them out. Enjoy!!
