There is not much better than garden fresh tomatoes... But when they come they all come at once. It's hard to know the best way to keep these beauties in order to enjoy them later in the year. These roasted tomatoes are delicious with fresh pasta, on toasted baguettes, or with eggs. They also make an incredible, light and fresh-tasting sauce that freezes well for so many uses later in the year! From pasta sauce, to enchiladas, soup or pizza, you'll find so many uses for your delicious roasted tomatoes! Start by roasting your halved tomatoes dressesd in a drizzle of olive oil in a 400 degree oven. After about an hour they are starting to caramelize slightly and have a deep red color and delicious sweetness. Add a couple to your favorite egg dish or fresh pasta for a quick, light meal. You can freeze them like this in vacuum sealed bags if you want to keep them whole. You can also purée them to make a light and delicious sauce with so many uses! Add a healthy pinch of salt. You could also add herbs now or roast fresh herbs with the tomatoes too, I will add them later because I want to keep my options open with flavors. I then spoon the purée into silicone freezer molds so I can keep it frozen and use what I need throughout the winter. One cube for a pizza, 4-5 for lasagna. Add the spices you like and you have fresh-tasting tomato sauce anytime you need it! i just keep refilling and freezing over the next few days to fill up this bag. Hope you enjoy!
