I had some leftover puff pastry from when I made pasties last weekend so I threw it in the freezer and waited until we were having company over this weekend to pop it back out and make something special for an appetizer. My guests absolutely loved these little vegetable pinwheels and they were quick and easy to throw together. Here's what you'll need:Puff pastry dough, veggies you like, cheese. I am using zucchini, mushrooms, spinach, red onion and garlic with Parmesan but experiment with what you have and love! Rough chop veggies before tossing in the food processor. Sautee with a little bit of garlic in butter or olive oil. Don't forget salt and pepper! Stir in chopped spinach once everything is browning and soft. Stir in 1/4c Parmesan and take off the heat. roll out your dough with flour to prevent sticking. And top with some of the veggie mix. And roll up! Putnin the fridge to cool. Once cooled you can slice and place into a silicone lined baking sheet. Bake at 350 until browned (about 30 mins). Enjoy!!
