What do you do when your hubby thaws pie dough thinking it’s pizza dough, but you have no pie fillings or fruit in the house? Make a savory vegetable and cheese tart! First bake the dough off with pie weights or beans until lightly brown, dry, and crisp. Then top with your cheeses, one soft and one hard. Here I am using goat and Muenster but you certainly could use blue cheese or Gouda or cheddar or any other you love. Then layer on some slow cooked , caramelized onions. Thyme is also a great addition here. Next do a quick carmelozation in. Hot pan for your veggies. To get the color, don’t overcrowd or move them much in the pan and allow them to caramelize. I did both zucchini and tomatoes. layer these onto the tart. Top with a little more cheese and bake at 400 until melted. You can pop under the broiler for a minute at the end to get the cheese a little color if you like too. Drizzle with a little good balsamic glaze or honey. Enjoy!!!
