Two takes on a comfort food favorite, when I make lasagna I make one traditional version for my husband and kiddos and one with layers of spaghetti squash for my healthier version. Tough to tell which is which until you cut into it! What you will need:-A couple lbs of meat of your choice: I am using a mix of ground beef and venison, but ground turkey and pork sausage also make great Lasagna! Use what you like. Why 2+ lbs? If I am going to make lasagna, I am going to eat it for at LEAST two meals. -Two jars of your favorite tomato sauce -Box of Lasagna noodles -Olive Oil -Garlic -Italian Seasoning -Two large containers of Cottage Cheese, I like the "small curd" -Mozzarella and Italian Blend cheese -Spaghetti Squash The best way to start is with the spaghetti squash... that way it is roasted and cooked before you are trying to handle it. I like to nuk the spaghetti for a couple of minutes to soften it up and the. I cut the stem off to create a flat end to allow you to safely split it down the middle. Scoop out the seeds and then rub down with a little olive oil, salt and pepper. Roast face down for 30-40 mins in a 400 degree oven. Next get your water boiling and once it boils add salt and your Lasagna noodles. I like to add them to the water in a pinwheel patters so they don't stick together. Pay attention to them and when they're not quite soft, pour off most of the water and backfill it with cold water and some ice. This way your noodles won't over cook and you will be able to handle them. They will finish cooking in the oven. While that's working you can start browning your meat. Add in the garlic and Italian seasoning to make it taste almost like sausage. Once it's brown turn the heat off and add one jar of the marinara sauce. By now your spaghetti squash is likely tender and cooling... use a fork to shred it into a "noodle-like" consistency. Add the squash to a bow and liberally season with salt, pepper and Italian seasoning. Ok let's get started layering! Start with a little oil and tomato sauce on the.m bottom so nothing sticks. We will start with the traditional Lasagna first. Then noodles... Then meat sauce... Another layer of noodles... A full container of cottage cheese. Top with more Italian seasoning. Sauce... And cheese... with more Italian seasoning! Bake at 350 for 45 mins or until bubbly and lightly brown on the edges. Let it set up for 10 minutes or so before cutting into. Alternative: spaghetti squash layersstarts the same way... a little olive oil and tomato sauce on the bottom so nothing sticks. next a layer of spaghetti squash instead of noodles. meat sauce... Another layer of squash... And finally cottage cheese with a little Italian cheese blend and seasoning sprinkled on top. I also like a little heat from red pepper flakes. Bake at 350-375 for 45 minutes or so until brown around the edges. It will be very bubbly due to the fact that there are no noodles to soak up the water from the squash. Let it set up a bit before cutting. Enjoy!!!! Either way your family will love it!
