I used to get this dish with my dad at a restaurant by the lake when I was a kid called Sunsets. It’s so easy to make at home and is a fun way to spice things up a bit if you’re in a weeknight dinner rut. Start by steaming some cleaned green beans. I use as many as I can fit in the steamer... trust me you won’t have to ask your kids to finish their veggies with this meal! While the steamer is getting going, dice up some good bacon. Reminder of my hunt, I always cut off the fatty ends and save them in the freezer for when I make beans. And get the bacon rendering in a big wok or sauté pan. Once it is starting to get crispy, remove the bacon from the grease and let drain on a paper towel. Next get your sauce together: 1/4c soy sauce, 2 tbs each minced ginger and garlic (Iuse the paste you can get in the produce section for ease!), 2tbs hoisin sauce and 2tbs honey. If you like it spicy also throw in a teaspoon of red chili flakes. in a little bit of the bacon grease (drain most off) sauté your shrimp until they start to get a little bit pink. Then add in your sauce and finish stir frying. The sauce will reduce down and get sticky. Add in your bacon... and al-dente cooked beans (err on the side of undercooking them so that you don’t end up with mushy beans). Toss to combine and serve on their own, as a side, or over rice for a meal.
