First I want to say that I am no expert in Indian cooking, but because I love the food I try my best to recreate the flavors in some of the dishes I love! Here is an easy and healthy take on Dal made with yellow split-peas. If you are an Indian cooking expert and have any suggestions for how to make this dish even better let me know! What you will need:Yellow split-peas, chicken stock, ginger and garlic, mustard seeds, tumeric, spinach and cilantro. I am doing mine in a small crock pot but a pot on the stove works well too. First add in your split-peas. I did two cups but this recipe is made in ratios so you can adjust the quantities easily. You then add twice as much liquid. I used chicken stock but you could use veggie stock or even just water if you are trying to avoid sodium. So for my two cups of split-peas I added four cups broth. You then add in your spices: a healthy dose of garlic and ginger (about 1-2 Tbs of each), a Tbs of mustard seeds and another of Tumeric. Stir it up and let it simmer on low until the split-peas have absorbed the liquid and are nice and soft 1-2 hours depending on quantity and heat). Then turn it out into a large bowl and add some extra water or broth to get it to the thickness you prefer. Sometimes I like it thick to eat it with a fork and other times I add more liquid for more of a soup.
You then stir in a full bag of chopped spinach and a bunch of chopped cilantro. And that's it! Full of protein and veggies, this hearty and comforting dish is one your whole family will love.
