Its an easy way to make eggs for a group without much hassle! First spray your casserole dish with cooking spread or rub with a small amount of butter or oil. Then put your diced peppers, onions and flaked smoked salmon into your casserole dish. To make throwing this together extra easy this morning, I just set some of the diced veggies aside in a container in the fridge when I was cooking dinner last night. No prep required this morning! Beat your eggs count on 2-3 per person depending on what else you're serving, and add a splash of whole milk or half and half and salt and pepper. Pour the milk and egg mix over your veggies and salmon. Finish with a few blobs of neufatel or cream cheese to melt into your eggs. Bake at 400 degrees for 20-30 minutes until the edges looks firm. If the middle is still not set, put the broiler on for a couple of minutes to firm up the top. Enjoy!
