We call this pasta bar based on a restaurant we used to frequent (I worked there when I met my hubby) which had a pasta bar and they would make your pasta in front of you. This is the recipe I would always make and now I continue to make it at home. My kids love it and I love that it's filled with great healthy protein and veggies in addition to the noodles that they love. What you'll need:Start by boiling your favorite pasta in salted water. While the pasta cooks, sautee mushrooms and garlic in a little olive oil or butter. Once they're browning, add your thawed shrimp. I buy mine frozen, raw with the tail on. Even if I get home and decide to make this somewhat last minute, all I do is open the bag and add cool water and in only a few minutes they're thawed enough to Sautee. You may have to replace the water once or twice and you'll be good to go! As they start to turn pink, add in your slightly steamed broccoli (no need to use any more pans... Just rinse and pop in the microwave for 1 minute). If you're not a broccoli fan, use whatever veggies you like or have on hand! Artichokes or zucchini also work well! Add in a small amount of your favorite tomato sauce (ideally with real ingredients and without all the added junk and sugar) and a glug or two of heavy cream (glug... fancy technical term!) If you don't have any cream, don't fret! Toss in a spoonful of cream cheese and it will melt right into your sauce and will add the same flavor and creaminess to your sauce. and some barely thawed peas (again, a minute in the microwave is your friend here!) Once the pasta is cook right, with just a little bite in it, scoop it out and add it directly into the pan. The extra pasta water on the pasta adds to the sauce making it nice and silky. And finally, stir in some fresh basil if you have it! So excited it is now the fresh herb garden time of year! Top with a little feta and chili flakes if you like spicy! Enjoy!!
