These scones are super quick to pull together and perfect on the morning when you have a piece of stone fruit that you want to make something delectable with! I was gifted these beautiful peaches and while I’m enjoying them fresh, ( I love them cold out of the fridge and because they’re perfectly ripe I was able to put them straight into the fridge upon arrival) I wanted to use one in a breakfast item this morning for me and my girls. Cherries or any berries would also be lovely here! This recipe is really quick and makes four good size scones so you won’t have an abundance of baked goods sitting around the house (though it is easy to double if that’s your goal!) and it comes together quickly thanks to the food processor. You all know my love for utilizing kitchen technology to make things easier! You start by putting the following into your food processor: 2c AP flour 1 tsp baking soda 3 tbs white sugar 3 oz salted butter, very cold (chopped into pieces) Pulse it to break up the butter into small pea-sized pieces Then you add in 1/2c milk plus 1/2tsp good vanilla extract (I had 2% on hand but you could use whole/full fat milk or butter milk here). Pour it in very slowly while blending and pulsing so it incorporates evenly. Don’t over mix. As soon as all the liquid is gone, stop blending. The texture will be like wet sand. Turn the dough out into your board, And add the diced fruit (1 peach or other fruit of choice!) Lately I am obsessed with cardamom cinnamon sugar so I dusted the peaches with some of that to bring in an additional aromatic flavor. Then very carefully you turn the dough over a couple of times into itself so that the fruit gets mixed in evenly and it comes together but do not overwork it. Pat it into a large thick disk for cutting. This recipe makes four nice large scones so cut the dough into four pieces. If you want them somewhat smaller, you could do six too. And bake for about 15 to 20 minutes in a 400° preheated oven on a silicon liner or parchment paper. You’ll know they’re ready when they are a bit crunchy and turning brown on top! Transfer them to a wire cooling rack so they don’t get soggy underneath Serve warm or at room temperature!

My only beef with scones has been that they can be dry. I'm definitely making this recipe. It looks easy, delicious and I bet the peaches add some much needed moistness.

I hope you love them! These are definitely moist. I also find sometimes scones are bitter but these are just the right amount of sweetness.

I love these scones so much and have made them in all different flavors. I just made a batch of mixed berry with blueberries and strawberries. I like to add sanding sugar on top of mine to give them a little crunch and extra sweetness!
