Don't worry, no porcupines harmed here! These delicious meatballs get their name from the rice and peppers that stick out of them. They're a favorite of my hubby's since his childhood and and our girls love them too. They're a warm comfort food that is easy to throw together with simple ingredients. What you'll needThe goal is just to combine all of your ingredients. Start by scrambling your egg in the bottom of a large bowl. Then add salt and pepper, garlic (I used paste to keep it easy but you could finely chop or grate it too), small-diced peppers and grated onion. By grating the onion, it adds liquid to the meatballs helping to keep them moist. for the meatballs, you'll also need your favorite tomato sauce! Next add in your ground meat of choice and a handful of rice, it's best if undercooked. Leftover white rice that is dried out also works well. Mix until incorporated. Don't over mix. Form into balls. We like baseball sized which is a good portion size for each kid. Bake at 350 for about 30 minutes until browned. Pull out and put on the stovetop and smother with tomato sauce. You can use marinara or even just plain canned tomato sauce. If you like spice add in some hot pepper flakes. We usually serve with roasted potatoes and carrots. Enjoy!!
