Quick and easy with limited ingredients, this flavorful pasta dish is not your typical weeknight dinner. Why you’ll need:Hot Italian sausage additional ground beef (optional) roasted broccoli penne pasta panko bread crumbs grated Parmesan Italian seasoning Start by browning your meat in a hot skillet. Roast your broccoli (mine was leftover from dinner last night so I chopped it and pooped it back into the oven to crisp up). If you’re starting from scratch toss in olive oil, salt and pepper and roast at 425 until crispy. While that is working, mid 1/2c panko with 1T Italian seasoning and 1/4c grated Parmesan cheese. Get your penne boiling and finish browning your sausage/beef. Add in a couple ladles of pasta water to help make a light sauce. If you don’t have enough fat you can add a little extra olive oil here if needed. Once your broccoli is hot and crispy toss on your cheese and reason bread crumbs and pop under the broiler for just another minute. Everything will crisp up in just a minute or two. Toss your al dente penne into your browned meat. And top with the crispy broccoli mix. Toss to combine and add a little more cheese on top until it’s cheesy enough for you. If you like it hot add hot pepper flakes here too. It is not a saucy pasta dish but the moisture from the pasta water mixed with true sausage fat and moisture from the cheese coats the pasta just enough. The best part is it’s even better the next day after the flavors have melted together.
