A fun way to add fruit into your pancakes on this patriotic day! What you'll need:Pancake mix, milk, Greek yogurt, three eggs, a banana, raspberries and blueberries. I am a big believer of protein at breakfast so I always look for ways to get more protein in carb-focused breakfast items like pancakes. This recipe packs an eggy punch and I also love the crepe-like flavor! Beat your three eggs and add your cup of Greek yogurt. Also mix in 1 cup milk also. Once the milk, yogurt and eggs are whisked together, add two cups of pancake mix. Slice your bananas on the bias and then cut them in half to make small strips. I am also using a squirt bottle for my pancake batter so I have better control of it. You can use an empty ketchup bottle too! To make your flag, melt a pat of butter on the griddle and make it into a rectangle. Next lay out your fruit using the blueberries in the top corner and the bananas and raspberries as the stripes. Remember that when you flip it, the image will be reversed. Then squirt your batter over the fruit in your rectangle. If you want very straight sides you can use the spatula to press them into a straight line. Flip carefully! And enjoy! Happy 4th of July!! ps: you can also make silly faces!
