This is a great way to add flavor and freshness to any regular meal you often cook. I am pairing with grilled chicken, rice and green beans tonight but pork or fish would also be a great option. I am using nectarines that I had already available but you certainly could use peaches or mango or experiment with other fruits. I hope you enjoy and this inspires you to get creative! Start by sautéing half a red onion sliced thin and your diced fruit in a little bit of olive oil. I also added in some fresh grated ginger and salt and pepper for an extra boost of flavor and freshness. as soon as the fruit begins to break down and get thick, deglaze with little rice wine vinegar to brighten up the flavors and add acid to the dish. next add in your finally diced pepper. A small squeeze of Dijon mustard adds another layer of flavor. and finally a little sweetness from some local jam I had in the cupboard… Marmalade, Apple jelly, or mango jam or any interesting flavor you have would work well here. (Side note, around the holidays small craft fairs and even our local grocery store will carry homemade jams and jellies… I always pick up a few interesting ones because when I need a little inspiration I can use them for a variety of things like these kinds of sauces but also for cheese plates and other appetizers or dipping sauces.) and last but not least a small spoonful of sambal chili paste for some heat! Give it another quick stir and turn off the pan so the peppers are still a little al dente. Here I served over rice and grilled chicken with green beans but again any regular grilled dish that needs a little new flavor would pair well with a compote like this. A little bit of chopped cilantro on top completes the dish. kid tested and approved!
