I didn't miss the carbs one ounce in these garlicky Zoodles tossed with fresh garden tomatoes and feta cheese. What you'll need:One zucchini (small enough to use your Spiralizer if you have one), a couple of fresh tomatoes, feta (or Parmesan if you prefer), butter, chili flakes, garlic salt and pepper. I start by making my Zoodles. I love my Vegetti spiralizer, (despite its horrid name). I toss them into the wok with some melted butter, salt, pepper, garlic and chili flakes. Use good butter if you can get it. My local Coborn's sells this gorgeous Amish gold butter by the log! Sautee for just a couple of minutes and then fold in your diced tomatoes. These beauties are from our garden. I did not use a filter... Despite the fact that they look like watermelon, these are in fact tomatoes!! Toss your feta in as well. After another minute turn the heat off. You really just want the tomatoes to be warm, not breakdown. Another sprinkle of salt and pepper and you are all set! It's really that easy! Dish up and enjoy!
