Meatloaf is a comfort food for so many and this recipe includes several tricks to bring out those home cooked flavors you’ll love. Simple ingredients and easy to pull together, your family is sure to love the Charmed version of this family favorite. What you’ll need:For this recipe I am using 3lbs of ground beef, but you can easily cut it in half if you want to make a smaller portion. I usually make the full amount and freeze one loaf for an easy weeknight dinner. For the meatloaf: 3lbs ground beef (85/15 is ideal- today I am using some 93/7 that was on sale mixed with 80/20 to get that mix) 2 eggs 1/2 yellow onion 1.5c whole milk 1.5c panko bread crumbs 2tsp salt 1tsp pepper 1tsp poultry seasoning 1/4c ketchup 2Tbs Dijon mustard 2Tbs Tamari dark soy sauce (or you could substitute Worcestershire sauce) 1Tbs minced garlic For the glaze: 1c Ketchup 2Tbs Dijon mustard 1/4c Tamari Soy A few dashes pepper and garlic powder Start by soaking the breadcrumbs and milk together and stir in the soy sauce, ketchup, mustard, garlic and seasonings. Next incorporate the eggs, And grate in the half onion for added moisture and flavor. Mix together with the beef until just incorporated. Do not over mix. Portion into your loaf pans (for three lbs of meat I am using three pans) and mix together the ingredients for the glaze. Spoon on the glaze and brush it evenly over the top of the meat mixture. Tonight I am baking two pans and freezing one. To freeze I put press and seal right against the glaze to get rid of as much air as possible. Pop in the freezer and when I am ready to use it I’ll pop it into the fridge that morning and put it (uncovered) in the oven that evening for dinner. Bake uncovered at 375 for about an hour and serve with your favorite sides. We love baked potatoes and green beans! We hope your family loves this as much as ours does!
