Yep I said it! And they're DELICIOUS! All you need is Greek yogurt, a little mustard, salt and pepper as your base. Then you flavor them with what you like best! Toss a little bacon in? Sure! An avocado and cilantro? Yum! Hot sauce and chives? You're getting the idea! To make these beauties I put my eggs on the stove my for 9 minutes (they boil for around 4-5 of that time) from the moment I turned the pot on until they're JUST firm and peel. Cut in half and set the egg yolks aside to mix with a few spoonfuls of Greek yogurt, a Tbs or two of mustard (I used stone ground but Dijon would work great too) and I added in a Tbs of adobo sauce (the delicious smoky hot sauce that canned chipotles swim in) which also adds that little punch of vinegar that cuts the creaminess of the eggs. Delicious and healthy! Enjoy making these your own with your own favorite flavors!
