This delicious and easy recipe is sure to please the whole family! Kids love the little meatballs and adults love the hearty comforting flavors and the nutritional benefits from all the veggies. What you'll need:Start by sautéing the onions and celery in your fat of choice (I suggest EVOO or butter). Once slightly soft, add in carrots... and broth (water and chicken base). I used 6 cups water and a very big spoonful of base. You can always add more if you don't get enough flavor as you cook. In a mixing bowl put your ground meat (I am using beef but you could use turkey or pork or a mixture of any of them), along with about a cup of grated Parmesan, garlic paste and a good palm of Italian seasoning. Mix until combined. And roll into grape/cherry sized meatballs. They need to be small so they cook quickly in the broth. Once your meatballs are rolled out, add in the orzo pasta. I use about 1/3lb small box in this recipe. It doesn't look like much but it grows! After just a few minutes you can add in your meatballs. They pasta and meatballs should cook at about the same rate. Once they start to cook they will begin to float and you wants to in sure that you slowly stir every once in a while to make sure nothing is sticking together. Well your meatballs and orzo are cooking you can chop up a bag of spinach. Occasionally check to see if the orzo is cooked properly. Once the pasta is just about cooked through you can add in your spinach. Now is a great time to check and make sure the broth has enough flavor. If not add a little more chicken base and salt and pepper. Stir and let simmer a couple more minutes to let everything come together. Serve in a bowl and top with a little extra Parmesan. Also great with crusty bread!
