An herby twist on a crunchy classic. Baked or pan-fried, these are sure to please the whole family! What you'll need:In addition to your chicken breasts, you'll need a couple of eggs, Italian breadcrumbs, Parmesan cheese and fresh herbs (from your window boxes if you read that post earlier his spring!) First mix the breadcrumbs with the chopped herbs, I used parsley, sage and oregano, but you should use what you like!). I also threw in a dash of salt. Then grate in some fresh Parmesan and mix them together. Beat your eggs and set up in shallow dishes to make a breaking assembly line. Cut your boneless skinless chicken breasts into strips about equal sizes. Dip first into the eggs and second into the breadcrumb mixture, pressing down slightly to coat all sides. Place them on a cookie sheet and bake at 400 for about 30-35 minutes, or panfry in a small amount of light olive oil. Cooking time will vary based on the size of your strips. Enjoy with Cesar salad or over pasta with a little marinara sauce and melted mozzarella to make chicken Parmesan!
