I was looking for something different to do with a roast and discovered that miso is an amazing flavor addition to a pot roast! This one takes some time, even in your Instant Pot, but is SO worth it! Sear your salt and peppered roast on both sides in a hot pan to build flavor. I prefer to sear on the stove rather than in the IP because I get a more even and thorough sear. Once you have carmelization on both sides, add 1/2c red wine. I used a Cabernet that we like to drink. Transfer the roast to the IP and add a rough chopped onion around it. Back on the stove add one cup water to your bubbling red wine and scrape up all the bits of flavor from the pan with a wooden spoon. Then add the hot liquid to your IP. Now it’s time for the miso. This is a miso soup pouch from my grocery store. If you’re lucky enough to have miso paste that ought to work nicely as well. Sprinkle on top of the roast. I also had a couple pieces of leftover bacon I crumbled in here for extra flavor. Totally optional but yummy!! Top with a few pats of butter Set your IP to high for one hour. When it’s done naturally releasing pressure, you will see the miso has made a flavor past on the meat. Flip over the roast ao the miso is down in the liquid and remove any bones (they should easily pull off). Add in two large containers of cleaned mushrooms. Set your pot for 30 more minutes on high. Again, natural pressure release. You will find a perfectly tender roast with an incredible savory flavor. The mushrooms will have soaked in the amazing broth. Enjoy with a vegetable of your choice!
