This protein-packed, hearty but healthy Dal is a great option for an easy dinner or great to make ahead for lunch for the week (either to heat up at work or use a thermos). You can vary the flavor by adding more or less of what you like. The amounts below add flavor but are mild enough that my kids love it too. Don’t hesitate to add more of any of the spices or aromatics if you want it to pack more of a punch! I have made a regular stove-top version of this often, but wanted to adapt to my Instant Pot and it worked perfectly! I hope you enjoy! Youll need garlic and ginger as well as mustard seeds, turmeric, and curry powder. You’ll also need yellow split peas, chicken or veggie broth, spinach (fresh or frozen) and cilantro. First sautée a Tbs of garlic and ginger as well as mustard seeds in a couple Tbs of butter or light oil. Let it get a little carmelized before adding your liquid, dry spices, and peas. For two cups split peas, I use 6 cups water. I like it smoother and a little more like soup but if you want it thicker use 5 cups water. So after a quick sautée of the mustard seeds, ginger and garlic, add in your peas, water/broth, good pinch of salt and pepper, 1 tsp turmeric, and 1/4-1/2 tsp curry powder. I use base rather than canned broth so I can add more flavor if it’s not as rush as I would like. 2 Tbs works well here. Be sure to give it a good stir before you pressurize so nothing is stuck to the bottom while it was on sautée mode. Then set for 30 mins of manual pressure. Use natural release, which takes another 20 mins or so. The peas should be fully cooked and smooth. If you like it chunkier, you could try 15 mins. Next add in your spinach. I am using frozen but have used chopped fresh also. Both work great. I also like to toss in a big handful of chopped cilantro. My lunch for the week is packed! I can eat it like soup or spoon over basmati rice or even quinoa. Also delicious with a piece of pita or even French bread to sop it up. Garnished with my freshly made IP plain yogurt!
