There is nothing better than homemade chicken stock to refuel your family. The Instant Pot makes it so easy and reduces the time down by hours. Just put your cooked chicken carcass or bones into the pot and add chunks of carrots, onion, celery, bay leaves, and a good amount of salt and pepper. Cover with water and you’re ready! IP on high pressure for one hour and let it naturally release pressure. Once the pressure is gone open and set up your strainer. I use a large bowl with a large strainer to ensure it holds the full volume of the pot. Dump the contents of the pot into the strainer. Set the strainer with the chicken and veggies aside to cool.
