So quick, easy, and inexpensive, making your own granola is one of the best ways to save money at the grocery store and provide healthy breakfast alternatives for your family! Start by melting 1/4c coconut oil and 1/4c honey together in a glass dish. Add 4c old fashioned oats and a nice healthy pinch of salt. Add in your favorite dried fruits and nuts and flavors. We usually do about 1/2c each of raisins, walnuts, almonds, coconut and cinnamon (about 2Tbs). Mix it all together until everything is well-coated with the coconut oil/honey mix. Spread onto a lined baking sheet. If you don’t have a silicone mat, use parchment paper. Bake at 275 for about an hour. Let it cool completely before transferring to a container. As it cools it gets crunchy. If you like chocolate chips add them after it’s cooled. Enjoy with yogurt, fruit, or even just milk as a cereal. Also makes great trail mix or a nice crunchy ice cream topping. Also makes a great gift in pretty glass jars!
