A quick and easy appetizer that is adaptable to whatever you have in your pantry! A great reason to keep a package of puff pastry in your freezer to make it easy to throw together a great addition to a party or brunch spread. You can let the dough thaw in the fridge for a day and it’s easier to work with. Or set it out on the counter for a couple hours. I first rolled out the pastry dough with a little flour to thin it out. I also pinched the seams together to avoid holes. I then smeared on a mix of cream cheese, shredded cheddar, chopped spinach and ham. You can fill with whatever you like! Herbed goat cheese? Buffalo chicken (cream cheese, Franks red hot sauce, cheddar cheese, shredded or canned chicken and some blue cheese dressing). Even mix some chopped jalapeños, olives, canned artichokes, or roasted peppers into cream cheese with some parmesan or feta. Whatever sounds good that you have on hand! and rollllllllllll it up! Slice into 1/2” rolls and bake on a lined cookie sheet at 350 (convection if you have it) for 10-12 minutes until they get golden brown. Enjoy!!!! One package of dough will make two cookie sheets of pinwheels. You can cover with plastic wrap (be sure it’s pretty air right or it’ll dry out the dough) and keep in the fridge for up to two days.
