Sometimes all it takes is thinking about something simple a little differently and you have an easy, fresh, light summer meal that everyone loves. What you'll need: Chicken, your favorite seasoning, fresh mozzarella, nice ripe tomatoes, fresh basil, fresh lettuce or spinach, good quality balsamic (you can skip if you aren't a fan), and bakery buns if anyone wants theirs sandwich style. First grill your favorite Chicken recipe. All I did was coat mine with a sprinkle of my favorite seasoned salt. That's it. No oil, nothing else. Next make your Caprese salad: I like to put a bed of lettuce or spinach on the bottom to add extra greens in. Then layer the fresh mozzarella with sliced tomatoes and fresh basil. Sprinkle with course salt on top to bring out the delicious flavor of the tomatoes. Isn't that a lovely spread? Now each person can build their dinner how they like it! For the kids, I put a couple slices of chicken on a bun and a few pieces of the Caprese on the side. Even if your kid isn't normally a lover of raw vegetables, give this a shot. I practically had to hide this platter from them before dinner or they would have nabbed it all! This one is my hubby's: he wanted Caprese on his sandwich plus more salad drizzled with balsamic on the side. And finally mine: grilled chicken right on top of the beautiful salad. The girls loved this delicious and colorful meal perfect for dinner outside on a beautiful summer evening. Enjoy!
