Adding an extra egg and two cups of Greek Yogurt give these pancakes a fluffy texture and a good serving of protein. Top with Cinnamon Maple Bananas and your family will never know that they're healthier than your traditional pancake recipe! What you'll need:Start by beating three eggs with 1/4 cup milk. Add in 2 cups Bisquick, and 2 cups plain Greek yogurt. (If you use sweetened yogurt you'll want to omit the stevia in the next step.) Finally mix in 1 tsp each of vanilla extract and stevia. Don't over mix. Your batter will be fluffy and bubbly and much thicker than a traditional pancake batter. Scoop out onto a lightly greased griddle on medium heat. These will not bubble like traditional pancakes so you will need to watch them closely and when they start to brown, flip them. These pancakes are delicious on their own, but if you want to top them with something special, a cinnamon maple banana glaze is a special treat! Look how big and fluffy they are! With the size I made mine, I got 18 pancakes so each has about 4 grams of protein. Start your glaze by slicing two bananas. Pour a thin layer of fresh maple syrup into a non-stick pan. Let them bubble away as they brown and begin to break down. At the end sprinkle a little cinnamon and give them one last stir... and enjoy on top of a nice stack of protein-packed pancakes!
