These are quick and easy and yield an abundance of delicious, gooey cookies that hit all the right notes. As a bonus, they’re made with no flour so they’re naturally gluten free! First cream together 1/2c softened, salted butter with 1c dark brown sugar and 1c white sugar.
Once creamed, add three eggs, 1tsp vanilla, and 1.5c creamy peanut butter. Best for another 20 seconds or so to fully incorporate. Sift 2tsp baking soda into 4.5c old fashioned oats (not quick oats) and then add this dry mix into the wet mix. Do not over mix. Lastly stir in 1c each, plain M&Ms and chocolate chips. Once incorporated, you’re ready to spoon out onto a silicone lined baking sheet and baked at 350 for 12-15 minutes. If you’re using two racks, swap the racks halfway through. When you pull them out they’ll be soft but if they have a little golden color they’re probably done. They will set up as they cool. Wait a little while for them to cool and set to transfer them. Enjoy!!
