Fun and easy brunch item that's a great way to make pancakes for a crowd! What you'll need: butter, an Apple, 4 eggs, 1.5c flour and 1.5c milk, cinnamon and brown sugar.Start by melting a couple tablespoons of butter in your pan. Make sure you coat the sides as well. Then add in your apple slices. Mix together 4 eggs, 1.5c flour (I used whole wheat white flour but AP works too) and 1.5c milk for about a minute. Sprinkle cinnamon over the apples and the pour batter over the apple slices. Sprinkle with more cinnamon and a couple tablespoons of brown sugar. Bake at 400 degrees for about 25-30 mins until puffed up and cooked through. Enjoy! You can also top with a drizzle of maple syrup. PS: also so great with bananas! "Bananakoeken!"
