A great way to make ahead a quick breakfast portion full of veggies and protein. Dice up your favorite omelet ingredients (get creative!!) and add a dozen eggs. Don't forget salt and pepper! Stir it up well. add about 1/4c cream and 1/2c milk. You can use all cream or half and half if you don't mind the extra fat in there. If you use only milk it doesn't come together as well so I suggest at least 1/4c cream. Stir in about 1/2c shredded cheese (whatever you like!). and scoop into greased muffin tins. Whatever you have left over you can make a quick a scramble with for that day or pop into a greased ramekin. Top with a little extra sprinkle of cheese and bake it at 375 (on the top rack) until puffed and just starting to turn a little golden on top. I like to set my tin on top of a larger jellyroll or baking sheet to ensure that if they puff up and spill over you don't have a mess on your hands. Enjoy 2-3 each morning all week!! They reheat with just a few seconds in the microwave.
