If you are looking for a different spin on dinner, give this easy enchilada bake a try! It's mild enough for the kids and packed with veggies too! What you'll need:First brown your ground meat... Lean beef, chicken or turkey will work great. I am using venison! If you choose a fattier beef or pork, which would be delicious, be sure to drain the fat off into a can before mixing with the rest of the ingredients. Add in 1/2 a diced onion. I am using red but any onion will work. In a separate bowl mix together diced peppers and rinsed black beans. Stir in your ground meat and onions as well a nice big scoop of sour cream. And a good handful of chopped cilantro. I found a tomato that needed to be used so I ended up tossing that in too (sorry, I know it wasn't on the first pic of what you'll need!). If you don't have a fresh tomato you can skip it or add in canned tomatoes... Like most of my recipes this is about adding in the veggies you like! In the bottom of your pan put a thin layer of enchilada sauce. You can use red or green, whichever you prefer. Next, a layer of tortillas. I am using corn, but flour works too. You can cut them to fit the pan best. It's okay if they overlap some. Next, like lasagna, a layer of your meat and veggie mix. Another layer of tortillas. I vary the pattern so it doesn't overlap in the same places. More enchilada sauce goes on top of the tortillas. If you are making a big pan you may want two packets or cans of enchilada sauce. and the last of your meat and veggie mix. The lay layer of tortillas... And the last of the sauce. Top it with cheese (I am using mozzarella because it is what I have. Cheddar/jack or another Jesse that melts well works great too. There are some really nice Mexican cheeses that are delicious if you can get them!) Bake at 350 until golden brown! ... About 30 mins if you are putting it right into the oven (somewhat warm); 45 mins or so of you refrigerate it first and it goes into the oven cold. Let it set up for a few minutes before cutting into. Enjoy!
