Dal is the perfect entry point into Indian cuisine. It is a mild, warm and comforting stew made from lentils or yellow split peas served over basmati rice. It's a healthy hit for my whole family. When I was pregnant with my older daughter I craved it like crazy so this recipe was my attempt to satisfy my own craving easily at home. I welcome any tips from those with more experience making Dal! What you'll need:1.5 cups dried yellow split peas (find them by the dried beans), 5 cups water, part of an onion, ginger and garlic (I use the refrigerated paste to keep it easy), spinach, cilantro, turmeric (great anti-inflammatory powers!), curry powder, and chicken/veggie base. First sauté 1/4-1/2 onion in butter (or coconut oil... but I love the smell and flavor of onions cooked in butter) along with a squeeze of ginger and garlic paste, salt and pepper, and a good pinch of mustard seeds. Then add your sautéed mix to your pot along with about 5 cups of water, a big spoonful of chicken base, 1 tsp Turmeric, 1/4-1tsp of curry powder depending on your taste, a good pinch of salt, and 1.5cups yellow split peas. I used a crockpot because I was going to be running errands, but you can also use your favorite soup/stew pot. Cook on low for 4 hours (on the stove it will go quicker). Once the peas are all soft and blending together into what seems almost like a purée, you are ready to add your greens. If you want it thinner you can add more stock. If you want it thicker turn it up and let some liquid evaporate. I moved mine to a stovetop pot for more temp control but you could turn it up to high and leave it in the crockpot to avoid another dirty dish. Taste an add more salt and pepper as needed. This recipe can require quite a bit of salt to get it properly seasoned. Remove the cilantro leaves from the stems and chop. You can give the spinach a light chop too if you want to, but it's not necessary. Add your greens to the hot purée and stir together. Serve over basmati rice. You can also thin it out with a little chicken/veggie broth and dip naan bread in it. Also yummy with a little Sriracha!
