If you have some leftover fresh ingredients from your Cinco de Mayo festivities, throw them together with a few hard boiled eggs for a fresh and healthy lunch! What you'll need:Dice about 1/4-1/3 of a red onion. Seed and chop a tomato. And seed and dice up a jalepeño. Toss together in a bowl. Add some chopped cilantro. Dice up six hard boiled eggs. To make the perfect hard-boiled eggs boil the water first and then gently lower the eggs into the water and let them boil for 10 minutes. Once you hear the timer pour out the boiling water and fill with cold water and ice to stop the cooking. As always, add a good pinch of salt! And a dash of hot sauce and the juice from half a lime. Mix together and serve with tortilla chips, as a sandwich or over a nice bed of romaine lettuce.
