If you have never had Chilaquiles, think of them as breakfast nachos. These will be the hit of your next brunch! What you'll need:The basics are : corn chips, enchilada sauce (red or green, whichever you prefer!), eggs and cheese (marble jack melts well, so does queso quesadilla, but cheddar or mozzarella would work great too). On top of that you can add whatever you like! Some options are: black beans, peppers, onions, jalapeños, cilantro, crema, cotija cheese, black olives, really anything you might like to put on nachos. The first step is to put the chips in a big bowl and toss them with the enchilada sauce. You will crush them some and that's ok. You want them to be coated well. Then put them into a deep casserole dish and top with your cheese and other toppings such as beans and lightly sautéed onions and peppers. Pop into a 300 degree oven to warm through while you cook the eggs. I like to use scrambled eggs with green enchilada sauce and fried eggs with red but cook your eggs however you like! Once the chips and sauce are warm and the cheese melted, top with the eggs and chopped cilantro if you have some.
If you want it to keep warm a bit in the oven, make sure the eggs are just still a little runny and keep warm in a low oven for up to an hour. This is where you could also top with cotija or crema. Dish up and enjoy!
