We all love pumpkin bread and muffins, pumpkin pie, and pumpkin spice this and that. But I bet you didn’t realize you can use butternut squash in place of pumpkin to make these delicious fall treats! You can!! This recipe uses one large roasted butternut squash and makes two small loaves of bread plus ten muffins. The output is moist and just sweet enough to enjoy smeared with butter or cream cheese. What you’ll need: 1 large butternut squash (3c pulp) 1 stick melted butter 1/4c real maple syrup 2 tsp molasses 1c white sugar (or use brown sugar to substitute for both white sugar and molasses) 1tsp vanilla 2tap cinnamon 1/2tsp nutmeg 1/2tsp cardamom 1/4 tsp clove 3 eggs 2 2/3c flour 1tsp baking powder 1tsp baking soda Start by cutting your squash in half and scooping out the seeds. Coat the cut side in olive oil and place face down on a cookie sheet to roast in a 350 degree oven for 45 mins or so until soft. Scoop roasted squash into measuring cups to get to about 3c of pulp. Add to your mixer with one stick (1/2c) melted butter. Plus 1/4 cup real maple syrup, 1 cup white sugar and 2tsp molasses (ok to sub 1c brown sugar if you don’t have molasses). I like to add the pie spices in next to be sure I like the flavor before I add the eggs and flour. That way I can adjust to taste! So next add in your vanilla, cinnamon, nutmeg, cardamom and clove. If you want more of one spice feel free to adjust! Then add in your eggs. Into the flour stir in the baking powder and soda and add to the mixer scoop by scoop until it just comes together. Do not over mix. Grease your baking pans and line with parchment. Scoop about 1/3 of the mix into each pan. This will leave you with enough for some muffins also. Preheat your oven to 350 and bake for about 45 minutes until cooked through. I like to stir 1/2 cup mini chocolate chips into the last third of the batter for the muffins. The muffins take about 20-25 minutes depending on how full you fill them. Let sit ten mins before turning out onto a cooling rack. The result is a pumpkin-like bread that is moist and not too greasy!
