What’s a better addition to a breakfast sandwich than a homemade biscuit? Biscuits beat the heck out of any English muffin, and these biscuits are hard to mess up, so that makes them a winner in my book! You’ll need: 4c flour 1c butter 3 Tbs sugar 2 Tbs Baking Powder 1.5 Tsp salt 1c Sour Cream 1c light beer Melt 1/2 cup of the butter in the glass or enameled cast iron dish you’ll be baking the biscuits in (I do this as the oven is preheating). Mix the other 1/2c melted butter into the mix of dry ingredients (flour, sugar, salt, and baking powder). Also mix or cut in the 1c sour cream. And mix/cut it until it is blended well and mealy. Then mix in your cup of light beer. Don’t over blend. If you prefer to use 7up that works too. Spread the mix out onto a lightly floured board/mat in roughly the same size/shape as your baking dish. And cut into squares. This recipe makes 12 biscuits for me. Place the squares into the buttered baking dish. Use the scraps to fill in any gaps. Bake at 425 for 20-25 minutes until you see the bottoms browning. And let cool a bit before serving. Serve with butter and honey or make into a delicious fried egg sandwich!
