I can't believe I haven't been making more quiches! This was so easy and absolutely delicious. What you'll need:Par-bake your empty pie shell (deep dish) and fill with chopped steamed broccoli. Top with a little shredded cheddar or marble jack. (Hint: to steam broccoli just rinse and pop in the microwave for 1.5-2mins.) You could sub in roasted asparagus or another veggie you love here too. Whisk your eggs well. I used 9 but our farm eggs are smaller. I would guess you would want 6-7 store bought eggs. Whisk in 1/2c heavy cream, salt and pepper. Also whisk in your herbed goat cheese. If you aren't a goat cheese fan, you could use feta or just more cheddar or marble Jack here too. Pour on top of the broccoli and then toss another handful or two of cheese on top. You will want to bake this on a cookie sheet in case of any spillage. I also baked my extra batter in a buttered ramekin. Bake at 400 for about 40 minutes. It will puff way up when you pull it out and will settle down some when it cools and the steam goes down. Serve warm or a room temperature.
