The perfect brunch food, this easy and delicious dish allows the host to enjoy her company while it cooks.For a 9x9” pan, which feeds 4-6, you’ll need six eggs, 1.5c milk, 1tsp vanilla and 2tsp cinnamon. I also add in a pinch of salt. If you choose to double or triple the recipe, make sure that the pan you use is not too deep or it won’t cook in the middle before it starts getting too dark on the side or top. You’ll also need roughly six cups (half a loaf) of cubed white bread. It is best to use a light and airy bread for this dish… Something like challah or brioche would be too heavy and would not absorb enough of the batter. Also 2 tablespoons melted butter in your 9 x 9 glass baking dish. Mix all of the batter ingredients (eggs, milk, cinnamon, vanilla, salt) and pour over the bread cubes tossing lightly. Let it sit a few minutes to absorb the batter. Then pour into your buttered baking dish. Sprinkle 1/4 cup brown sugar over the top and bake at 350 for 45 minutes to an hour or until bubbling on the side and golden brown on top. The inside will be moist but not wet or raw. Let it cool a few minutes before spooning out onto plates. Serve with real maple syrup. Enjoy!!
