I love love love apple crisp. The tartness of the apples, the oatmeal in the crispy crumble topping, the comfort of the warm spices. So when it comes to apple pie, I want the crisp there too! This recipe can be done as a pie in a pie crust, or in a buttered baking dish as a true crisp with no bottom crust. It’s great both ways! What you’ll need:For the filling: 6-8 tart apples (I like Granny Smith or Haralson best) 1/2c sugar 1Tbs cornstarch 1/2Tbs cinnamon Pinch nutmeg Pinch salt For the crumble topping: 1c brown sugar 3/4 oatmeal 3/4 flour 1stick butter frozen 1tsp cinnamon Four dashes nutmeg Pinch Salt Plus a pie shell if you want to make a pie… I use frozen premade because I am not great with pastry! I like to start by mixing the dry ingredients for the filling first and then as I peel and chop the apples I toss them in the sugar and spice mix in order to keep them from browning. Once all the apples are chopped and tossed in the sugar, spices and cornstarch, you can pour into your pie shell or buttered baking dish. Next, put your topping ingredients into your food processor. I do the frozen butter last so it stays as cold as possible. Be careful chopping! It’s tough but it works. Or you can cube the butter prior to freezing if you prefer. Then you pulse 10-15 times until the butter is pea-sized. Then just it pour onto your crust or into your baking dish! I like to fill it to the BRIM so I like to use a piece of foil or parchment on my baking sheet under the pie so I don’t get burned pieces stuck to my pan. Bake at 350 for 50-60 minutes until the top crumble crust is hard and brown. Let cool uncovered so the crisp crust doesn’t get soggy. Enjoy! This one is especially good with ice cream!
